{yummers} tomato tortellini parmesan soup.

this by no means will be a foodie blog of any sort, but i will share with you some of our fave weekly menu recipes that are quick, easy, and delish.

we love soups around here. one of our faves is this hearty tomato tortellini soup adapted from taste of home recipes.

we often purchase the 3-pack of cheese spinach tortellini from Costco. it freezes well, and on days the pantry is running low, it's my go-to.  this particular soup is one of my faves because it's quick and simple - in 30 minutes or less, and all three kids will devour it! we're super fans of leftovers in this house and it always provides us with lunch for the next day.

pair it with a fresh sliced loaf of french bread to soak up all that creamy broth and your belly will thank you.

tomato tortellini parmesan soup 
adapted from taste of home recipes


1 package refrigerated cheese tortellini
2 cans reduced-sodium condensed tomato soup, undiluted
2 cups vegetable broth
2 cups 2% milk
2 cups half-and-half cream
1/2 cup chopped oil-packed sun-dried tomatoes
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried basil  {today i used fresh chopped right from our garden}
1/2 teaspoon salt
1/2 cup shredded Parmesan cheese  {we love the parm petals from Costco, yum!}
Additional shredded Parmesan cheese, optional

i love adding a bit of fresh ground pepper for a little punch.

Cook tortellini according to package directions. Meanwhile, in another large pot, combine the soup, broth, milk, cream, tomatoes and seasonings. Heat through, stirring frequently. Drain tortellini; carefully add to soup. Stir in cheese. Sprinkle each serving with additional cheese if desired.
